The plasma generated by a warp core is a medium of transferring energy, similar to electricity in the 21st century, or steam in old locomotive trains. Plasma is much more efficient at transferring energy than electricity and wires. The large amounts of energy is used in the warp coils to compress and expand subspace dimensions of space-time in a way that would create a warp bubble that would bring the ship towards its destination at faster-than-light speeds by generating a warp field. They need all of the energy from matter-antimatter reaction for it to be efficient.
